Just because summer is coming to an end, doesn’t mean that summer salads need to!

This charred vegetable, avocado, and black bean salad is the perfect simple and nutritionally-dense summer salad that can be enjoyed all year long 🙌🏼
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS:
★avocado
★sautéed mushrooms
★sautéed black beans & onions
★roasted cherry tomatoes
★roasted bell peppers
★roasted corn
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Finish the salad with a squeeze of lime juice, some balsamic glaze, or the salad dressing of your choice 😋

✨TIP: When fresh vegetables don’t fit your budget or aren’t in season, don’t hesitate to use frozen! Frozen vegetables are just as nutritious as fresh and are often more convenient. I reheated frozen roasted corn from traderjoes to put in this salad!
